Soybean oleic acid is a mixed fatty acid obtained from soybean oil by hydrolysis and other processes. The main components include unsaturated fatty acids such as oleic acid (ω-9), linoleic acid (ω-6) and linolenic acid (ω-3), and a small amount of saturated fatty acids such as palmitic acid and stearic acid. Among them, the content of linoleic acid is usually higher, accounting for about 50%-60%, the content of oleic acid is about 20%-30%, and the content of linolenic acid is about 5%-10%.

It is usually a light yellow transparent oil-like liquid that may partially solidify at low temperatures. It has a special oily smell and a mild taste.
